This is what we ate for dinner tonight…
I had been at work all morning, and we spent most of the rest of the day grocery shopping, so I wanted something quick, easy and tasty for dinner.
Enter the burgers that we buy from Costco. I have posted about them before, when B grilled them.
This time, I served them on a bed of wilted spinach, that also had some toasted sliced almonds mixed in.
And I made root vegetable fries (Parsley root, carrots and beets). These were very simply tossed with a little coconut oil and then roasted in the oven (200°C/400°F) for around 30 minutes until browned and crisp.
And then I topped off the burger with some of my homemade chutney,
and served some dill pickles that I was given by a client at work.
