These are the fruit gummies that I included in today’s packed lunch. They contain no colours or added sugar and consist of nothing but juice, honey and gelatin.
If you were to have a healthy candy, this would be it!
While I used all lemon juice, you could use a mixture of lemon and lime juice to make an even more sour gummy or even orange juice for a slightly less sour gummy. You could also use other fruit juices to make a sweet gummy.
Sour Fruit Gummies
3/4 cup lemon juice
6tbsp raw honey
5 tbsp gelatin
1-2 tbsp tapioca flour (optional)
Place the honey and juice in a small pan and heat to melt the honey. Avoid letting it come to the boil as this will destroy the beneficial enzymes in the honey.
Once it is hot and the honey is dissolved, sprinkle over the gelatin and leave to soak for a few moment before mixing it in.
Pour the mixture into a mold (I used a silicone loaf tin to make turning the gummies out easier).
Place in the fridge for a couple of hours and leave to set.
Turn out the jelly on to a board and cut into shapes. I just cut them into squares, but you could use small cutters to cut them into fancy shapes.
If you are using it, toss the gummies in a little tapioca flour. This stops the gummies from sticking together.
Store in an airtight container in the fridge for up to 2 weeks.
